It's been a little over 3 months and I'm happy to report that the toe is pretty much healed. I got a pretty fun and cool looking horseshoe-shaped scar out of the deal.
Unfortunately it's not something I can whip out to impress someone at a bar.
I've even gotten back on the kayak since the accident!
